Following the triumph of Dark Harmony No. 1, awarded Gold at the 2024 World Whiskies Awards, our next limited release Dark Harmony No. 2 is a blend of local craftsmanship and collaboration, modern whisky innovation and a passion to produce something extraordinary.
The Dark Harmony series proudly introduces its second expression, a Doppelbock cask finish. Long ago, Hellyers Road Distillery began forging a path to produce single malt whiskies of distinction. This path was born from the spirit of local artisans whose perseverance, patience and shared passion to produce quality whisky with a difference.
This new release in the series - Dark Harmony No.2 The Doppelbock Cask, is a toast to depth and complexity.
Oak barrels used to age our single malt whisky once decanted were transported to Communion Brewing Co. where they filled these whisky infused casks with their Doppelbock brew to age. On return to the distillery these casks now imbued with the malt forward complexity of the Ember Ale Doppelbock were once again filled with 2016 vintage single malt. The Doppelbock, a ruddy dark beauty, layered upon our single malt whisky the rich warmth of a late winter Bavarian Brauhaus - the dark marriage of single malt whisky and beer cask flavours, in perfect harmony.
