This latest edition to our internationally acclaimed and award-winning Dark Harmony Series is a Heavily Peated Single Cask whisky finished in a Black IPA Cask.
The creative synergy between Hellyers Road Distillery and Communion Brewing Company continues with this very special heavily peated single cask edition of the Dark Harmony Series.
As the dark winter nights made for hunkering down and weathering the storms of the Northwest Coast of Tasmania, the brewers at Communion crafted a colossal Black IPA with rich roasted malts and herbaceous hoppy character. Aged then in a Hellyers Road Distillery ex-whisky barrel the beer underwent a formidable transformation. Now christened The Mutinous Bastard, the barrel aged Black IPA became known far and wide on our island state of Tasmania.
The cask now decanted of this big dark and broody beer, returned to Hellyers was filled with a hand-picked single cask of our revered heavily peated single malt whisky. The transformation continued within the whisky, taking on the depths of the roasted malts and floral herbaceous notes of hops. The interplay of the peat and sweet bourbon cask maturation has truly led to a remarkable whisky that evolves like no other in the glass.
You’ll feel the influence of our coastal bond stores in every drop, as if the crashing waves and dark, brooding skies of Tasmania’s rugged shores have somehow become part of the liquid itself.
Bottled at 53.5% ABV, there are only 239 bottles of this very limited release, and you have the opportunity to secure a bottle NOW before its gone.
Please note: This is a minimal intervention whisky that showcases all the delicious flavours, so there will be flocking (small particles) in the whisky. These are completely normal for a whisky like this and are completely safe to consume.
Nose - Deep notes of orange marmalade and rich blackberry compote with the smokiness of cindering beech wood. Flickers of coastal sea air are jumping out the glass to meet you. Strong hits of dark chocolate laced with mandarin oils and fresh peanuts and honey-soaked figs.
Palate - An all-encompassing golden syrup mouthfeel. This dram instantly envelops the palate with notes of dark chocolate ganache interlaced with puffs of lavender smoke. Deep flavours of orange zest and nectarine jam. Sweet and warming with a trace of toasted hazelnuts and honey at the end.
Finish - Long, warming and enchanting finish. Notes of cocoa linger on the palate and the end.
