Our Sherry Matured Whiskies

Over the years, we've been working on sherry cask whiskies across the range, and it has become something of a vocation. From the Sherry Cask to The Iberian, you may have tried a few and noticed the unique character that sherry casks impart.
Oloroso sherry is the cask we're talking about today with two spectacular whiskies that have been aged in these casks. Made with palomino grapes in Spain's south, oloroso is classified as a dry sherry, aged oxidatively in a solera system, where sherries are blended across years to create structured and complex fortified wines. These sherries are nutty and textural, rich, almost luscious, while still dry.
Oloroso casks have become wildly popular in Europe, where they are seen as imparting layers of flavour to a whisky, without sweetness, making for truly superb drams.
Our Oloroso 10 Year Old has a full life maturation in these casks, and we believe is Australia's oldest example of this style. If you are dipping your toe into sherry cask whiskies, you can purchase this in a small format bottle or in a gift pack.
We also have an Oloroso Cask Finish 20 Year Old in our Aged & Rare collection. First barrelled in 2002, this single malt spent two decades maturing in American oak (ex-bourbon) before an exquisite finish in 40 year old oloroso sherry cask. The power of this distinguished old cask was so profound that only 5 or so months finishing was needed to develop incredible depth and complexity.
