American Oak at Hellyers Road
Since 1999, we have been ageing our new make spirit (milled, mashed, fermented and distilled on site) in full-size, 200L American oak ex-bourbon barrels. So firmly embedded in our history, they were almost exclusively used until 2014, when serious exploration of other casks started.
These ex-bourbon barrels, often from Jack Daniels, are perfect for long-term maturation, adding sweetness without harsh tannin over decades.
Our American Oak range is certified pareve kosher. Crafted to be enjoyed by all.
AUSTRALIA'S OLDEST SINGLE MALT
Working away in our corner of Tasmania for almost three decades has resulted in holdings of approximately 90% of all Australian whisky aged 18 years and above. The single casks in this collection are all American oak ex-bourbon, including 23 and 24 year old single casks, which will be released in 2026 and 2027.

Hellyers Road oldest American Oak single cask whisky to date is the American Oak 22 year old single cask #2325.03 with 23, 24 and 25 year old single casks being released in 2026 and 2027.
American oak is widely used to mature whisky because it is readily available, cost-effective and produces excellent flavour. In the United States, bourbon must be aged in new, charred American oak barrels, which creates a steady supply of high-quality ex-bourbon casks after their first use. For generations, Scotch whisky producers have used these casks because they are more affordable, while also imparting classic flavours such as vanilla, caramel and honey.
American Oak typically contributes to sweeter flavours such as vanilla, caramel and honey, while French Oak tends to add notes like spice, toasted nuts and tannins.
