21 Club Release No.02 - Celery Top.
The Whisky
Celery Top has matured for 21 years in American oak ex-bourbon casks and was bottled at 53.2% ABV.
American oak ex-bourbon casks have been the cornerstone of our maturation program since the very beginning, with some of our oldest American oak casks now surpassing 22 years of age.
These 200L bourbon casks, crafted from American oak, provide the ideal maturation vessel that perfectly complements the character of our unique spirit. Over two decades of maturation create a whisky that embodies the complexity of character, elegance, and the distinctive profile of Hellyers Road.
Crafted exclusively for the 21 Club from selected 2003 American oak casks, this whisky is a stunning example of quality craftsmanship and patience.

Each of our 21 Club releases has featured a Tasmanian endemic rainforest tree, species that are unique, beautiful and brought to life in the drawings of Inti Callaghan on the labels of the 21 Club whiskies.
For this release, we chose one of our very favourite endemic Tasmanian trees, Celery Top Pine. Not only do its delicate green cladodes and rich red cones reflect the festive essence of the season, but its timber, much prized by boatbuilders and furniture makers, warms from a light creamy hue to a rich gold over the years – just like our American Oak cask single malt whisky.
This treasured release will come with a Certificate of Authenticity, a note from the artist Inti Callaghan and a postcard sized version of Inti's beautiful artwork.
