A Rare Peated Single Cask
Blackheart was made with 100% Heavily Peated Malted Barley, sourced from Bairds of Inverness in Scotland. This whisky is the rarest of the rare, as only an exceedingly small number of casks of Tasmanian heavily peated 21 year old whisky are in existence - we know because we are the only ones to have them.
Only 165 bottles were in this cask. The high ABV and heavy peat have, over 21 years, produced an exceptionally complex whisky unlike anything you have ever tried.
A Note from Fiona on Peat
Blackheart 21 Year Old indeed packs a peated punch! With layer upon layer of complexity owing to the malt itself and our careful distillation practise that, for our peated whiskies, allows us to extract as many and varied flavour and aroma compounds - called phenols - from the peated malt.
The heavily peated malt we source is at an impressive 40-50PPM of phenols, so the array of flavours varies from maple glazed bacon, to medicinal iodine, to the ashy campfire. Each cask distinct, I felt like a kid in a candy shop choosing this exceptional cask from 2004 and I'm so pleased to have been able to select this absolute gem for 21 Club.

Blackheart Sassafras
Each of our 21 Club releases has featured a Tasmanian endemic rainforest tree, species that are unique, beautiful and brought to life in the drawings of Inti Callaghan on the labels of the 21 Club whiskies.
For this release, we chose the aromatic Blackheart Sassafras (Atherosperma moschatum). Native to Tasmania's cool temperate rainforests, the flowers of Blackheart serve as a vital food source for many native insects and forest-dwelling birds.
This treasured release will come with a Certificate of Authenticity, a note from the artist Inti Callaghan and a postcard sized version of Inti's beautiful artwork.
