This month, we are delighted to offer you exclusive access to 21 Club Release No.12 - She-Oak.
The Whisky
She-Oak began its journey in 2003 in American oak first fill ex-bourbon casks. After 17 years of primary maturation, the whisky was decanted in April 2020 and transferred in our own freshly tipped 2004 richly peated casks, where it matured further for a period of 6 years.
This extended secondary maturation in peated casks allowed the whisky to develop a remarkable depth of flavour. The result is this 23 year old Peated Cask Finish #20F05c03 that is a true testament to the quality of the peated whiskies crafted at Hellyers Road and is made all the more remarkable by our maritime bond stores, a mere stone's throw from the Bass Strait.
This release comes from one of four sister casks that shared the same maturation journey. Cask 1 was released last year as a 21 year old Peated Cask Finish #20F05c01 and was awarded Australia's Best Single Malt at the 2025 World Whiskies Awards. Now, after a further two years of maturation, time has refined this exceptional whisky into our first-ever 23 year old release She-Oak. This release marks not only the first 23 year old to be released in the 21 Club, but also the oldest whisky ever released by Hellyers Road.
Tasting Notes
Nose
Maritime notes - oyster shells, rocks at low tide. Flinty pencil shavings, dusty floorboards. Caramel and stone fruits begin to lift from the glass.
Palate
Whispers of campfire smoke and a lush, full palate. Classic bourbon cask notes and soft, savoury peat. Delicate vanilla and meadow honey. Clean minerality.
Finish
Delightful length; soft peat persists.
She-Oak
Each of our 21 Club releases has featured a Tasmanian endemic rainforest tree, species that are unique, beautiful and brought to life in the drawings of Inti Callaghan on the labels of the 21 Club whiskies.
For this release, we chose She-Oak (Allocasuarina verticillata)
A foundational species within its ecosystem, Drooping She-oak can dominate woodlands where other trees struggle to survive. Often forming pure stands, it transforms hillsides into a sea of silver-grey foliage that ripples and shifts with the wind, evoking the sound of a distant, turbulent ocean. Its presence signals a specific environmental narrative of poor soils, low rainfall and exposure.
This treasured release will come with a Certificate of Authenticity, a note from the artist Inti Callaghan and a postcard sized version of Inti's beautiful artwork.
Please note that all 21 Club releases are pre-ordered and bottled only upon order placement. Our ordering window for She-Oak closes on July 31, and the whisky will be dispatched in mid-August.
