Brightness that Stands the Test of Time

A whisky over two decades in the making, this remarkable single cask 3114.11 was laid down by our pioneering founders in April 2003, and matured for an extraordinary 23 years, 1 month and 24 days in one single American oak cask.

Over 23 years, a lot changed inside this cask. When it was finally decanted, it produced only 128 bottles. The new make drew flavour and colour from the oak, but it was the slow interplay of whisky and oxygen, as the volume fell and the years passed, that made the magic.

An exceptional example of aged Tasmanian whisky, showing the results of patience and the influence of maturation by the sea. A new member of the family, carrying the lineage of our roots.

Milled, mashed, fermented and distilled on site, like all Hellyers Road whiskies.

Cask Filled: 24 April 2003
Drawn: 17 June 2026
Yield: 128 bottles
Total Maturation: 23 years, 1 month, 24 days

"This whisky is the perfect embodiment of the Hellyers Road spirit for me. Its balanced complexity underpins a zest and brightness that twenty-three years in the cask has only amplified. From humble beginnings to stunning brilliance, this is quintessential Hellyers Road."

- Fiona Coutts, Head Distiller

Nose

Shy to start, then unfolds with lemon, lime and florals. There's a buttery/bakery note, more florals, apricot and peach. A herbaceous note of rosemary and honey to finish.

Palate

Delicate citrus and floral notes, then comes a classic cereal note, with rich, buttery honey rounding it out. Oily and sweet, and remarkably balanced.

Finish

Oily, sweet and long.

THE BOX

Each bottle is housed in a unique presentation box, hand-crafted by local Master wood worker Rob van Tholen from prized Tasmanian timbers: Huon Pine, Myrtle and Celery Top Pine. Each bottle includes a letter of authenticity personally signed by our Head Distiller, Fiona Coutts. Adding to its individuality and intrigue, each presentation box has a secret locking mechanism to safeguard and showcase this treasured bottle.

American Oak at Hellyers Road

Since 1999, we have been aging our new make spirit (milled, mashed, fermented and distilled on site) in full-size, 200L American oak ex-bourbon barrels. So firmly embedded in our history, they were almost exclusively used until 2014, when serious exploration of other casks started.

These American oak barrels, often from Jack Daniels, are perfect for long-term maturation, adding sweetness, without harsh tannin over decades.
