A journey of over two decades in one cask.

A whisky over two decades in the making, this remarkable single cask #2325.03 was laid down in November 2002 and matured for an extraordinary 22 years, 3 months and 25 days in one American oak, ex-bourbon cask formerly home to Jack Daniel’s Tennessee Whiskey.

In this 200 litre single cask, a lot of changes happened over 22 years and when decanted, it was very much half mast, producing only 80 bottles. Where the new make spirit extracted flavour and colour, it was the interplay of whisky and oxygen that made the magic, as the cask volume decreased and the whisky slowly aged.

An exceptional example of aged Australian whisky showing the results of patience and the influence of maturation by the sea.

Milled, mashed, fermented and distilled on site, like all Hellyers Road whiskies.

Each bottle is housed in a unique presentation box hand-crafted by local Master wood worker Rob van Tholen from prized Tasmanian timbers: Huon Pine, Myrtle and Celery Top Pine, and includes a letter of authenticity personally signed by our Head Distiller, Fiona Coutts. Adding to its individuality and intrigue, each presentation box has a secret locking mechanism to safeguard and showcase this treasured release.

"This is a complex, and well-balanced whisky, offering a smooth and refreshing journey of flavors. Beginning with aromas of peach, apricot, and apple compote, complemented by baking spice. The palate reveals juicy ripe fruits, with hints of marzipan, and splash of orange oil, alongside earthy spices."

Nose

Toasted nuts and sweet coconut ice lead into stone fruits - nectarine and peach - along with fresh cut melon. A drop of water reveals herbaceous notes of Manuka, before revealing fresh cut watermelon and honeydew.

Palate

Lemon curd, sticky ginger spiced treacle cake lead, with hints of toasty charred oak, followed by stone fruit highlights of peaches in syrup. A note of fresh herbaceous Australian gum tree leaves lingers.

Finish

A long and fruit forward finish leaves you wanting more of this delicate and enticing dram.
